The high-resolution Mt Fuji image is among those provided in macOS Big Sur. Open the Desktop & Screen Saver preference panel and under the Desktop tab, select Apple Desktop Pictures. Scroll to locate the Mt. Fuji image.
The image from OS X Lion had no reason to be 4K/5K compatible in 2011, so it may not be as sharp as the current image in Big Sur. You can take the Lion Fuji image and place it in a folder in your Pictures folder (e.g. ~/Pictures/Fuji), and then add that folder to the first paragraph's Folder section. Then select that folder to display the image.

Really? I don't have them.
I am using an M1 mini with macOS 11.6, and the image is present here. I used a Mojave TM drive to complete the initial setup when I received this mini, and the Mt. Fuji image may have originated from that TM source. The image is not on my 2014 MBA running 11.6 though.

Ah, the Migration Factor changes thing greatly.
For others looking in on this question - both the M1 MBA and Mac Mini M1 - no migration used at all. So do not scratch heads thinking something is wrong - it is not..

As you have copies of the wallpapers you can just add them yourself.
In my /Library/Desktop Pictures folder on 11.6.
Interesting. I checked three Macs running 11.6 and none have them. I do have an older iMac which is still running Catalina and it does have one. The second one in the above post.
