I have had this problem for over a year now. I have prefer nicknames set to off across all of my devices, but for some reason, they still appear in Safari in iOS and even in Messages on my MacBook Pro.
I have tried to look for ways to turn them off, but I am at a loss.

Thanks for reaching out in the Apple Support Communities. We understand your contacts continue to display their nicknames, although you have the settings for this disabled. Do you store your contacts with iCloud or another email account?
Have you checked your contacts to ensure that their nicknames are located under the Nickname field?
If so, we'd recommend removing and then recreating the nickname for one of your contacts to test if the behavior will reoccur.

We appreciate the update. Check this out: About Short Name on iPhone, iPad, and iPod touch. We wanted to share the steps to remove the nickname under the section " About Nicknames".
If you've completed this and it's still not removing them, contacting Apple Support is the best step forward. From this page, you'd select iPhone > Apps & Features > The topic is not listed. Once selected, put in "Unable to turn off Nickname". This should be the best path to work towards resolving your issue.

Hi! Yes, all of my devices are set up with the same iCloud. I had checked everything and they all have the same settings and to not use nicknames.
They are all under the Nickname field.
I did try this on one of my contacts and nothing changed.
Nicknames show in the QuickShare in Safari or any other app. This has happened ever since QuickShare became a thing years ago.
I also noticed today that nicknames are used for Messages when the banner popped up on my phone. But in the app itself, there is no nickname in sight. I updated to iOS 15 yesterday.
This is very frustrating.
I tried that, but there is nowhere for me to report an iOS issue.
