Will the new USB-C to MagSafe 3 Cable work with a 2017 MacBook air?
I'd love to just take a usb c MagSafe adaptor for my older MacBook Air.
Any ideas anyone (yes I know its new).

No. The MagSafe 3 is compatible only with the 2021 14 & 16" MacBook Pros.
A 2017 MacBook Air does not have the needed connection.
