Apple Music won’t stop playing

My iPhone 12 Pro won’t stop playing music when I hook up to my trucks Bluetooth or USB port even when I swipe up and close the music app it starts playing again. Even when I push pays and put the app in the background it will stop for a little bit then automatically start playing music again. Any suggestions on how to fix this so it will only play music when I want it to?
