iPhone audio freezes after using Apple Watch

Hi all. I have an iPhone 8S (iOS 14.8). I listen to audiobooks (multiple apps) and music while driving. I used to be able to pause listening and make/receive a call with no problems. A few weeks ago I got an Apple Watch SE (ver 7.6.2) and ever since then if I get/make a call and then end it, the audio on the iPhone freezes for a second and then plays for maybe half a minute and then freezes for a second, rinse and repeat. I've searched around but can't find anyone else with this annoying problem. Anyone have any ideas on how to fix this issue?

The first (and simplest) thing to try if something isn’t working right is to restart your Apple Watch and its paired iPhone. If necessary (device not responding), try a forced restart. Both methods can be found here:

If that doesn't help, the next steps would be to unpair and pair your watch again and restore from the backup just created. This should result in no loss of data. It deletes all temp and corrupted files and re-indexes the file system.
