What could cause iPhone storage discrepancies?

When I go to Settings > General > About the available storage is more than my iPhone storage capacity. When I go to Settings > General > iPhone Storage it shows I have used none but also lists apps with various storage amounts they are using.

Any idea what could be causing this and how I could remedy?
