I have an extra MagSafe charger for my "Early 2015" 13" MacBook Pro.
I just ordered a new 14" M1 MacBook Pro.
Will this old charger fit/work with the new MacBook Pro?

It will not. Apple updated their MagSafe charger to be a different shape. You will need to use the new charger that ships with the Mac.
A major difference also is the wattage of the new Magsafe 3.
Magsafe 2 to 1 could be adapted as long as the wattage was similar enough.
The 14" Magsafe 3 I did notice uses 97W to USB-C to Magsafe 3, whereas the 16" MacBook Pro uses 96W USB-C to USB-C. Pay close attention to the wattage on the brick to ensure you don't overpower one versus another.
