I'm trying to update my iPhone 6s from 12.3.1 to 15.0.2 - I've gotten the 15.0.2 update downloaded successfully, but my phone keeps returning an error when trying to install it.

You mentioned the error message twice but still have told us what it said.
Make sure:
The error message says it can't install and to retry or try again later.
If you have downloaded already and it is failing at the install point it is more likely to be that you aren't up to 50% or you do not have sufficient space, it isn't going to be anything WiFi related. Also, do you have a SIM in the phone?
If you do have a greater than 50% charge and it still does not work I would encourage you to try it via your computer.

The software update says 4 gb is needed. I'll try clearing out 2 gb more to see if that helps, thanks. No SIM in the phone. And I'm at 86% charge right now.

I'm not sure where it said that, if you are doing a full install the download may be 4GB but it is unpacked after download. You do need to put a SIM in the phone, it does not have to be an active one.
Try the computer again and if your computer cannot see it (what type of computer, which version OS, which version of iTunes if you use it) then click on the Get Support link at the top right of this page to start the service process.

Darn - I cleared out 6 gb and put in a SIM. I get the same error of it not being able to install.

Computer: MacBook Pro, Mid 2015 15"
OS: High Sierra 10.13
iTunes: 12.6.2.20
iTunes recognizes that the phone is plugged in. I just can't get the phone to show up in the Finder.
It won't show up in Finder if you are using High Sierra, you have to update it via iTunes.
Ah okay. Ha so when I try to update software in iTunes, it says iOS 12.3.1 is the current version of the software.
Go to Settings > General > About > Model and post the number here.
Also go to Settings > General and scroll down and see if you have a beta profile on your iPhone.

And then for beta profile - Would that show up as something within General? I don't see anything about a beta profile.
