My medical ID on my iPhone is showing on wife's iPhone . She shares most of my info from my phone including Calendar, Contacts, and a few other apps. How do I separate my medical ID from hers so the data shows the correct medical info?

The short and sweet answer is that you should not be sharing an Apple ID. That is why this information is being shared to her phone. Have her create her own Apple ID and set up Family Sharing as OrigamiFan1 suggested above.
