As mentioned in the title, can M1 iPad Pro output 120hz to FHD or 2k monitor via thunderbolt to hdmi cable? Or is there any other way how to achieve that?

Take a look at "Connect to displays and monitors" found in Charge and connect with the USB-C port on your iPad. It appears this would work. Are you having trouble with this set up? If so, what happens?
