I’ve sent a friend of mine a total of 240$ in two transactions of 120$ and they’re saying that they can’t accept the money and that I did something wrong sending it through. However on my end, the transaction says sent, and the money has been removed from my bank account. I think they are lying about not receiving the money but I don’t know what I could do about it to get my money back.

If the money is not in your bank account and it is not in your Apple Pay balance, it should be sent properly. There is an option that allows you to auto-accept Apple Pay messages, which I'm assuming your friend has enabled.
