Pages v11.* has no text-to-table conversion capability. This is because Pages was never designed to compete with, nor be a Word clone, unlike LibreOffice Writer which does have a Table menu > Convert > Text to Table feature. The table one creates in Writer can be copied/pasted to the body text in Pages and will arrive as a proper Pages table.
In older versions of Pages prior to v11.*, one could replace white space with tabs between the text words, then copy/paste that selection onto the first selected cell of a Pages table, and that content would then automatically populate as many rows and columns as needed. Not in Pages v11.* though.
The only solution you have is in the first paragraph.
