I am using IPhone 12 Pro Max. dial pad- cannot edit a number or add number in-front or middle of the dial pad?

Hi Zakarie13,

Welcome to the Apple Coimmunity.

You might need to go to the "Contacts" app to EDIT the incorrect phone number.

and

You can always delete the contacts phone number, and re-add it correctly, if you need to.

This article (link below) from Apple Support gives info on how, and more you can do in the Contacts app.
