Missing Notes Account

We see that you need help with iCloud Notes.

To confirm, do you mean if you go to Settings > Notes > Accounts > [account name] on your iPhone, does the option to enable Notes not appear? If so, does restarting your device resolve the issue? Restart your iPhone

If that doesn't resolve the issue you may need to remove the account and add it again. Add an email account to your iPhone, iPad, or iPod touch.

That's exactly the problem. It's not available as an option to turn on. I've logged out of all of my devices hoping that might "reset" it but it didn't. So I guess it's off to Apple Support.
