So I'm the family organizer and the only family member is set up as adult. So he subscribed and paid for the icloud+ 2TB storage plan and shared it with me! How do I go about using the storage for it without giving him access to all my icloud account as well as every external account info on my Apple device?

If you use it with family sharing, then you will have your own space for your files in the iCloud plan. No one can see your files without logging in to your iCloud account.
