After the most recent update, to reply via “talk” now you need to click the message and click the mic icon. I bought the watch for the previous option of just lifting the watch to my face and speaking. Is there a way to set a “default” so my watch first allows me to talk to text without pushing the icon (I need this because when I lecture I can quickly respond to students in my labs)?

The only way to do this is to Use Siri.
You can turn on raise wrist to speak and Hey Siri (found in iPhone>Watch>Siri)
Then lift your wrist and say something like "hey Siri reply to message from Student "A",, bleah bleah bleah

Not the same thing at all. Automatic vs tap.
Yes the microphone is now in the texting window along with emojis etc.
Don't like it either but hey I'm not a designer but a user.

Like I said above, try using Siri for this.
I think the confusion is that before the update I did have to press the mic icon but after the update now you have to select the “text message box” and then press the mic icon. The update added an additional “hands on” step (if that makes it more clear)
That is not true. It was a feature I used daily.
