Choosing different input/ouput with AirPods Pro

Choosing different input/ouput with AirPods Pro on macOS Monterey. I thought this was an option in previous versions. My big over ear headphones powered by a Yeti Blue USB microphone was my default for years used with for both input/output. Those headphones wore out and broke (everything except the drivers from wear and tear.) I switched to using my AirPods Pro for output and continued using my Yeti Blue for input.

It seems with Monterey, I can no longer select my Yeti as input while the AirPods Pro is the output. When I macOS automagically selects AirPods Pro it switches my both input/output. When I try to select input manually to Yeti, it switches for 1 second then goes back to the AirPods Pro. Is this the auto pairing feature?

Somewhat related and annoying, when my iPad gets a notification its takes over AirPods leaving my active macOS to pause content or freak out when I'm on a call. Is this because the iPad saw my focus change and commandeered my active AirPos from my Mac?

I will likely get another pair of over ear headphones for my Yeti Blue mic to avoid these issues.

Thank you.
