I have set up do not disturb for different times for different days I think the new focus setting. However the different days do not seem to be recognised as it will turn off do not disturb at the wrong time for the wrong day!

Double-check the steps here: Use Focus on your iPhone, iPad, or iPod touch.
Have you tried removing the schedule, restarting and then setting it up again?
Is the iPhone updated to iOS 15.1 yet?
Do you have Focus on any other devices?
