How to upgrade?

I have a Mac Mini with macOS Mojave 10.14.6, I want to upgrade to Big Sur but my options on the System Preferences send me directly to Monterrey, wondering if there's a way to just go to Big Sur instead? Also, I have Adobe Suite 2020 and just want to be sure there are no compatibility problems. Lastly, in my hard drive, I have a few partitions that I don't want to have the new OS erase, not sure about how this works. Thanks guys!

A macOS upgrade should not delete any volumes or partitions, but you should always back-up everything before an update or upgrade!
