iPhone 12 Restore Stuck On "Restore in Progress" Message

So I got an iPhone 12 recently, and after the update to iOS 15.1 and main restore finished I powered it on . Then slowly but surely my data started coming back. Then I noticed my photos weren't. I know if I Stop the the restore I might lose my precious photos. And it's been 2/3 days and it just says "Restore in progress, An Estimated 18.2 GB will be required to finish restoring apps and data". I checked and I have WAY More than 18.2 GB available. It just stays hung up on "Restoring Media". But the real Issue is if I go to to [Account > iCloud > Manage Storage > Backups] , I can see my old phone's backup (28.2 GB) just sitting there and it says it will delete itself when all my data is restored.

Did/Does anyone else have this problem and can you help me out?

NOTE:

I used iOS 15's Get ready for you're new iPhone feature to create the iCloud backup on my old phone
