if switching from one carrier to another - will I lose all my photos and contacts?
If switching mobile carriers by switching sim cards - will I lose my contacts, photos, etc?

It is extremely unlikely you will lose anything. Storing user data on the SIM card was an early GSM thing, modern smartphones store everything in device storage and in your iCloud if you have enabled it. The SIM is now simply your access key to cellular service.
