Why can’t I update my iphone to the lasted ios 15. I have an apple phone 10 plus. I need that update to sync my new watch

First there is no such thing as a 10 plus.

And why can't you update? What is happening when you try?

Do you:

Have 6GB of free space?
Not using a VPN
Have a good WiFi connection?
Have a 50% or better battery charge and preferably connected to power?
Low Power mode is turned off.
