it’s really important that I get that data back, how can I do this?

Hello SeanTriana,

We understand that significant locations aren't showing on your device, and we'd like to check into this with you.

"Significant Locations: Your iPhone and iCloud-connected devices will keep track of places you have recently been, as well as how often and when you visited them, in order to learn places that are significant to you. This data is end-to-end encrypted and cannot be read by Apple. It is used to provide you with personalized services, such as predictive traffic routing, and to build better Memories in Photos."

You can find more information about Significant Locations, and managing Location Services here: Location Services & Privacy

You mentioned that this happened after updating; which iOS version is your device running currently? Here's how to check: Find the software version on your iPhone, iPad, or iPod

Were any other changes made to the device before this occurred? For example, were significant locations ever deleted on your iPhone previously? Delete significant locations on iPhone

Does restarting your device change the issue? Restart your iPhone

Thanks!
