Where do I find the UDID number on my iPhone X?

You cannot on the device itself. That is no longer supported due to abuse of user tracking via UDID by shady app developers.
If you really need it, you can still get it using iTunes (Finder on newer MacOS).
Under normal circumstances there is no need to know the UDID. But if you want to find it connect the phone to your computer, if it is a Mac with Catalina or later click on it in the Finder sidebar. If it is any other computer click on its icon in iTunes. The model of the phone will appear below the device name; click on that and it will display the UDID.
