So with the specs I should receive great performance. if not 100% at least 95%.

Unfortunately when I check the performance of the Extreme Disk Via Black Magic Disk Speed or with amorphous disk mark the the average the writing and the reading under 700MB/s.

I upgraded the from BigSure OS to Monterey Mac OS but nothing helps. What I can do to solve this issue?

Try a different Adapter if you are having to bridge between a USB and your Thunderbolt 3 port.
