My phone reboots itself like every 5 minutes. It doesn;t stay on long enough to complete a backup. Is there any way I can do a backup that will continue where the last one left off? Also it will stay on without rebooting in DFU mode. Is there a way to backup the phone in DFU mode?

Given what you describe, there is no way for you to backup that device now. Whatever is wrong with it now is not going to allow you to backup. There is no way to backup in DFU mode, and any interrupted backup will have to start all over again the next time the device boots.
