How to reinstall macOS - Apple Support
You can install macOS from Internet Recovery. The process for using Recovery is different if you have an Intel-based Mac or a Mac with Apple Silicon.
If you have an Intel Mac, shut down your Mac, then restart your Mac while holding Option+Command+R to install the latest public version of macOS compatible with your Mac.
If you have a Mac with Apple Silicon, shut down your Mac, the restart your Mac and continue holding the power button (Touch ID) until you see the startup options window.
From recovery, you'll need to authenticate your Mac, then you can reinstall macOS. If the install fails, or if Recovery installs the beta version again, you'll need to erase your Mac then install macOS again.

We can't discuss in the Monterey for question concerning Beta software. In the documentation you received you were told where to post about questions. If may be in the Feedback Assistant app that is available to Beta users

If I were you, I would unenroll from the beta program and wait for the release of 12.1. If for no other reason than the 12.1 beta contains fixes that aren't in 12.0.1.

You're fine. The only thing you can't do here is ask questions about betas or any problems you may have with them
As I said, I would wait for the release version of 12.1 and not bother restoring to 12.0.1.

FWIW, restoring the shipping version of macOS is not "discussing" the beta.
