How to switch from Ventura Beta 13.1 to the official Ventura?

Unenroll from the beta program then wait for the release version of 13.1. You don't want to try and downgrade.

FWIW, to revert to Ventura 13.0 you would have to back up your Mac using Time Machine, create a Ventura 13.0 bootable installer, boot your Mac from that, erase your Mac, install Ventura 13.0 from that, then migrate your data from the backup. It's a fair amount of work, takes quite some time, and something could go wrong.
You really don't want to do that. 😎
