New watch won’t connect

Just record my new watch 7 I have an iPhone 11 with all updates up to date and running IOS 14. I start to pair them the globe thing comes up and they match. Then says new update is available for the watch - iv tried to update then it instantly says unpairing. Tried installing update at a late stage and unpairs - both as a new watch & restoring from back up
