since I updated to the 15.1 version, I have no sound notification on incoming email.

Mail Notification settings have been substantially revised in iPadOS15. You may need to refine your Settings:
Settings > Notifications > Mail >
- Allow Notifications - set to ON
- Customise Notifications > [Mail Account] > Alerts - set to ON
- Customise Notifications > [Mail Account] > Alerts > Sounds - select as required
You will need to repeat the customised notification settings for each email account.
