I am creating volume on my hard drive. Should I only use one volume? What should I set the reserve size and the quota size? I will be installing macOS Catalina. I have 500 GB of hard drive space.

I advise that you leave those settings alone. In most cases there is no reason to set quota/limit.
An advanced user might wish to set them, but the casual user does not need to.
