Last night I changed my iPhone's passcode due to it being taken away from me, and now I can't remember the passcode. Is there any way to back up the data (since I don't have any backups) from my iPhone?
Right now, it is currently locked for one hour. I do not have Siri enabled, and I have restarted my device so it cannot be used.

As Latranner explained, you cannot back up an iPhone unless you can unlock it. Backups must be made before disaster strikes, after is too late.
Yes. Unfortunately, you will not be able to recover your data without a backup. In the future, please be sure to take regular backups of your devices to avoid having another issue like this occur.
I mean, yeah, but I DONT want to erase my data. I want to successfully back up everything I have on my iPhone without restoring to factory settings.
Oh, and also, I did not back up my iPhone before.
I have done it with my iPad using a third party app, but that's it.
