Hi hoping someone can help please. A little while ago, my son updated his phone and has resulted in combining the data on each of the phones. All our photos are on each other’s phones (over 5,000) what is the simplest way of saving all our own data/photos and setting him up a new Appleid/iCloud

Sign out apple id from your son iPhone Sign out of iCloud on your iPhone, iPad, iPod touch, Apple TV, or Mac - Apple Support

And don't keep on copy of photos , and let the process be completed , in the empty fields if son has already a new web mail address that was created in the past , sign in with new web mail address and its password with different credentials or a new Apple ID can be created How to create a new Apple ID - Apple Support

note : your iPhone will be intact and photos will be in your iPhone / iCloud , the son iPhone will not sync with your iPhone .
