I bought a new 11 Pro Max and I want to setup/transfer from my old phone (XR). I looked up how to do this and found the apple quick start, my question is do I transfer my SIM card before or after this process? Also do I open "Quick Start" on my old phone to start? I'm no good at this stuff lol.

Yes, you move the SIM card before or after you start the transfer. I personally do it before.
As part of the set up process on the new phone, you will be prompted to move the data over.
