Do I transfer my SIM card before or after this process?

I bought a new 11 Pro Max and I want to setup/transfer from my old phone (XR). I looked up how to do this and found the apple quick start, my question is do I transfer my SIM card before or after this process? Also do I open "Quick Start" on my old phone to start? I'm no good at this stuff lol.
