Apple just replaced my iPhone12 and now I cannot connect to my car bluetooth

Remove the old iPhone listing from the vehicle. If it appears on the iPhone after you restored from a backup, remove it from there as well. Then put the vehicle into discovery/pairing mode, and turn on Bluetooth on the iPhone to put it into discovery/pairing mode. It should work then.
