I did this as an experiment but now can't seem to delete or change it
Just to clarify. I did something (who knows what) to the phone and now when I call, for example, my brother my photo appears on his screen
Any ideas on how to stop/disable/change this?

What type of calls? For Voice Calls it is not being sent from your device.
However if it is iMessage Your name and photo can be shared with anyone using iMessage, but you'll be asked to confirm that you want to share with someone when sending or replying to a new message.
