No. This stuff doesn’t require you to manage it. Turn it on, forget it.

As long as you have cellular service on your phone, when you don’t have a Wi-Fi network it will automatically switch to the regular cellular voice network or Voice over LTE (VoLTE) if that is enabled on your phone. This will required that you have Cellular Data enabled, however.

Wi-Fi calling does not need to be considered (at all) when leaving the house; when departing from any Wi-Fi network.

No, you can leave that option turned on, it won't affect your cell calls or service.
