What can I do to not have so many passwords

Those are incompatible goals; to be secure means not reusing passwords. You can use the Apple Keychain app on iOS devices and Macs to store your passwords, so you only need one password (for your Apple ID) to automatically fill in passwords on apps and websites. Or there are 3rd party apps that do this also, such as 1password.

Along with Keychain, make them unique, and keep a handwritten list of each on a hardcopy, sheet of paper. Store it in a location that only you are aware of, and only you have access to. Refer to it when visiting the site.
