Can I remove outlook of my iPad and what will happen if I do

If you remove the Outlook App from your iPad, both the App and all associated data will be removed from the iPad.
However, assuming that you are using Microsoft Exchange or an IMAP mailbox, all email will continue to reside on your Mail Server.
