It should be no different than using Apple Pay elsewhere.

Either pay inside and use Apple Pay at that time.

Or if the gas station has a pump that supports it, then initiate the payment at the pump.

Or if the gas station has an app that allows you to pay for gas using Apple Pay (such as Shell), then use that
