It looks like after updating things seem smaller on your iPhone. We'd be happy to help!
Based on your description, it sounds like previously you may have had display zoom enabled. You can check if that's still the case in Settings > Display & Brightness > View, and selecting "Zoomed"

OK, I figured out a workaround. I have an ipad mini, bought
c. August 2019. Upgraded to 15.1 last night.
Previously, home screen layout had four rows (iirc) and five
columns. After upgrading, the default is five rows and six columns, with no way
to change the number of rows and columns (i.e., no way to spread out the icons)
via any setting that I can find.
I was incorrect above in stating that toggling on Large App
Icons did not change icon size -- doing so in fact DID change icon size, but
just made the icons squish (technical term, look it up) together.
How do I get back to fewer icons on the screen, so that the
icons are more spread out?
This is the workaround I found (with the help of one hour on
the phone with Apple support):
Place a single widget on each screen on which you wish to
have fewer rows. Doing so seems to force the rows to space out (but does seem
to affect the number of columns). Before adding a widget, I had six columns and
five rows; with a widget, I have six columns and four rows. The icons are more
spread out.
And oh BTW -- the icons forced off the screen by adding a
widget are not simply added to the next screen containing icons; they are
forced onto a new screen, their own screen. So, if adding a widget reduces the
number of rows on a given screen from five to four, the fifth row is simply
pushed onto the next screen, by itself.
there is no View option on my ipad. Any other suggestions?
