I'm not seeing any Spatialize Stereo option on MacOS Monterey following these instructions from Apple. Is there a way to enable the option? I have Apple AirPods Pros.

You were reviewing a very helpful article. In that article it states:
Choose Spatial Audio while you're playing multichannel content or Spatialize Stereo while you're playing two-channel stereo content.
Are you currently playing multichannel content? If so, what content are you currently playing? Also, which app are you using to play this content?
