How do I block emails on my iphone 7 IOS 14.8 without opening them?

Only if you know the email address or title content you want to block. You can set up a rule to move the mail to a folder or even to move to the trash.
If you use iCloud mail see https://support.apple.com/en-gb/guide/icloud/mm6b1a3f8a/icloud
If you use Gmail or Hotmail etc, refer to their instructions for creating rules.
