my iphone is associated to an old AppleID that i no longer have access to the email associated to it. how do i get that old apple ID off my iphone

Just because you no longer have access to the email address doesn't mean you can't sign out of the Apple ID. Use the article below as a guide of where to sign out. Don't forget to turn off Find My Phone when signing out.
