iCloud storage

iCloud backs up your phone’s content so that it can sync across devices and be available in case you need to restore it. You can go to Settings and then click on your name at the top and choose iCloud to see what is being backed up/stored on iCloud.

iCloud email is built into iCloud, so you don’t need to specifically enable backup for iCloud email. You can make sure that you’re using iCloud email on your iPhone by going to Settings > Your name > iCloud and ensuring that iCloud Mail is turned on.
