Anyone know why my (newish) earbuds aren’t working with phone calls? They work fine for listening to music. I’m using an 3.5 mm heaphone jack adapter on my earbuds to plug into the lightning port of my iphone SE.

Compatibility being the Culprit:
What's the iPhone SE generation you have? Apparently, your earbuds is only compatible with the 1st generation of iPhone SE. So, if your iPhone is the 1st generation, then that is the issue here --they are incompatible.

Yes. It makes sense. If they are incompatible, and if they are for listening only.

I have the new generation iPhone SE. Does it make sense that the earbuds work for listening to music but not phone calls? I really don’t want to toss the “old” earbuds since I got the adapter for them, and it’s wasteful.
