I just bought an extended magic keyboard with Touch ID to use with my 2017 27inch iMac, and I wanted to enable Touch ID, but there's no Touch ID option in the system preferences. Running Monterey 12.0.1 - can anyone help? Can't find any info about this online

Touch ID will only currently work on 24" M1 based iMacs, Touch ID is not a feature that will ever work with Intel based Macs like yours. In short, you bought a nice keyboard but with a feature you cannot use.
