How do I configure double tap options?

My previous AirPods (Gen 2, I believe), I could configure 'double tap' options on both the Left and Right ear buds. My AirProd Pros do not seem to have that option. How does one loose features when upgrading to a 'pro' model? Is there a way to configure those options in a manner I'm not understanding?
