Is it possible to select which email accounts contribute to the dock unread number?
I have some shared email accounts that I don't want to show up as I am not responsible for checking each individual message, I only have access to see the important messages etc. So would it be at all possible to edit which inboxes contribute?

You can select Inbox only, All Inboxes, or a Smart Mailbox.
So, if you create a Smart Mailbox that shows only the accounts you are interested in having in the Dock Unread count, you can set it to that.
Mail Preferences > General tab.
