I'm worried about a data leak from my stolen iPhone 12 Pro Max

Should I be worried about my iphone being unlocked by the thieves and my data leakage?????All my personal files and pghotos were in that device. I believe Apple phones are not crackable but still i am worried. BTW i am not able to find my iphone as the location in that iphone was turned off due to security in Kabul-Afghanistan. Help......

Your data is secure - Nobody can access your data.

Unfortunately without a backup neither can you.

Please  look at this Apple article and my additional advice below it:

If your iPhone, iPad or iPod touch is lost or stolen – Apple Support

Tracking lost or stolen phones

The 'Find My' tracking is to help you discover if you left your phone in the office or the restaurant. Lost or Stolen phones are rarely ever seen again.

Risk mitigation

Get your provider to

Cancel your SIM.

Send you a replacement SIM on same number.

You can then put the SIM in another phone to get the codes you will need.

Phishing warning

Its possible for a thief to obtain your phone number particularly if you did not have a PIN set on the SIM.  So do not respond to texts to sign into your account! They are NOT from Apple!

Recognize and avoid phishing messages, phony support calls, and other scams - Apple Support

Resign to the fact that if you had a passcode set and you do not provide your Apple ID via phishing texts then your data is safe but you will never see the phone again.

Click on this link for general information about what to do "If your iPhone, iPad, or iPod touch is lost or stolen" --> https://support.apple.com/HT201472

- The Find My service is the only recovery feature Apple offers. It MUST be set up before the device is lost. If you did not do that it is too late to do it now and there is no other feature Apple offers that can help you find it.

If location services are off you won't be able to find it, but several of the features mentioned should work if it can connect to the Internet. After that it is a matter of your passcode security and for the really secure things, your password security.
